WINEMAKING

The grapes are harvested at the end of September, beginning of October in what could be defined as a late harvest, thus allowing the bunches to start a drying process directly in the vine. Merlot and Cabernet Sauvignon grapes, in equal percentages, are pressed and vinified separately. At the end of fermentation, the new wine is stored in stainless steel tanks for about one month, and is then assembled, Merlot and Cabernet together and placed in French oak barriques for at least 3 years.

In detail, this “edition” of Piume Rosse was created by combining two vintages which together gave life to a harmonious and balanced union. The 2017 vintage, characterized by small volumes and fine quality giving the final product an excellent structure and character, also thanks to the 5-year stay in barrique, and the 2019 vintage, characterized by a cooler season, rich in younger and fruitier notes releasing an aroma with an unmistakable Bordeaux feature.

Furthermore, the use of barriques of different toasting levels, some newer, others used several times, gives further facets and intriguing aspects to this wine which represents the result of research over the years.

At the end of ageing in barrique, the wine is aged for 6 months in the bottle before marketing.

Ideal in combination with stews, grilled or smoked meat, tasty meats such as lamb and game. Excellent with mature cheeses.
