COLFIORÌ SAUVIGNON IGP
Sauvignon Colfiorì was born from our love for our territory. Like a nectar featuring all of the most peculiar and selected characteristics of this vine, it shows a great personality, straw colour, green leaf and exotic fruit delicate and persistent aromas. The grapes less exposed to the sun are selected directly in the field in order to get an exclusive white wine only for those who really look for a wine unique in its kind. The typical characteristics of the vine are clearly recognizable and are even enhanced by its strong mineral note coming from the Morenic hills soil where our vineyards are located.
VINIFICATION
Healthy grapes are collected by hand with a correct balance between acid and sugar, and stored into 15kg boxes. After a 24 hours cold maceration into cold rooms at 8/10°C temperature, stalks are removed from grapes and the skins are pressed softly, separating skins from must. The day after, by natural settling, the clearest part of must starts its alcoholic fermentation which starts at 14°C thanks to the yeasts on the skins in order to impart the character of the vine. Later on, the fermentation goes on thanks to the yeasts selected by us, at a temperature of 16-18°C, to make the aroma more complex, intense and persistent. Aging only in stainless steel tanks where the wine remains sur lies" on the lees for 5 months and 30 days in the bottle prior to commercialization. The wine is bottled from the month of March.
TASTING
It is a harmonious, noble wine, featuring an intense and elegant fragrance with green fruity notes and a straw yellow color with light green shades. Its elegant varietal aroma recalls directly the scent of the grape, with vegetal hints of nettle and yellow pepper, intense, penetrating, very persistent with passion fruit, pink grapefruit and sage notes. It is delicate and complex with citrus hints. In the mouth, harmony and length are enhanced by clear fruity sensations, with lively and lingering aftertaste. This Sauvignon perfectly pairs with fish starters, delicate first dishes as saffron risotto or tagliatelle with truffles, but also with white meat and backed fish.
