MONTE CERVO MERLOT IGP 
In this area having a age-old wine vocation, the work of man has been able to innovate, while keeping intact the beauty of what surrounds him. This is certainly the most important red grape vine in the world. The colour is ruby red, intense with notes of black cherry, wild blackberry and blueberry. The taste is balanced and rich flavor, backbone and persistent. The Merlot “Monte Cervo” was born from the vineyards of Tenuta Maddalena, located in the oasis of the Mincio Park where  soil, climate and  habitat  are ideal for vine.

VINIFICATION
The grapes are handpicked when fully ripe, stalks are removed and the grapes are pressed, taking care of the  integrity of the berries and then  are subjected to alcoholic maceration in stainless steel small tanks at a controlled temperature of 25-26 ° C for 15 days. After fermentation, skins are separated from the wine, which then mellows for 15 months steel tanks before being bottled.  6 months of aging in bottle before release.
The perception of intense color immediately arouses  an expectation of pleasure then gratified by the wealth of flavors and the complexity that only a very low yield Merlot can offer. The sensitivity of the Man and the prolonged maceration technique allowed us to express a unique wine structure, while keeping alive the interpretation of our own culture. It is a protected geographical indication red wine made from 100% Merlot grapes, grown in spurred cordon system in the area of Mantua hills near Lake Garda at an altitude of 85 m asl.  The soil tends to be loose, with a skeleton, deep enough and with good fertility.

TASTING
This important wine, if respected in its absolute elegance is an ultimate winning red wine. Deep ruby colour with purple shades, the nose opens with  fresh aromas of red berries like blueberry and currant, then moves on to hints of spices, from black pepper to liquorice ending up with  balsamic notes. The taste is fully satisfied by nicely lush and balanced tannins.
Backbone and fairly tasty, gives a lingering and varietal finish. This wine features a strong personality and is true to its terroir, revealing its predisposition to aging. It is ideally pairing with juicy and aromatic meat, it goes not only with everyday dishes, but also with pasta dishes full of flavor and aroma. Excellent with red meat (fillet and sliced beef), lamb or grilled meat. Recommendedservice Temperature: 16-18°C
